42g Protein Chicken Pita Wraps

High-protein chicken pita wraps with marinated chicken thighs and homemade pita.

Ingredients

  • 6-8 Chicken Thighs diced to desired size
  • 2 cups Greek yogurt
  • 1 whole lemon zest
  • 3 cloves of garlic
  • Olive Oil
  • Seasonings: Garlic Powder, Onion Powder, Peruvian Seasoning, Cumin, Cayenne, Paprika, Red Pepper Flakes, White Pepper, Salt & Pepper
  • 1 Cup Bread Flour (add more if dough is too sticky) + As needed for surface
  • 1 Cup Plain Non-Fat Greek Yogurt
  • 3 tsp baking powder
  • Seasonings: Garlic Powder & Salt (fresh cilantro)
  • 1/2 Cup Greek Yogurt
  • 1/2 Cup Mayo
  • 1/2 Lemon Juice
  • 1 Tbsp Olive Oil
  • 1-2 cloves garlic
  • Seasonings: Fresh Cilantro, Onion Powder, Salt, Pepper

Instructions

  1. Preheat oven to 425 degrees F. Dice your chicken thighs to the desired size. Add them to a bowl and combine all the ingredients above, then mix. Marinate for 30 minutes in the fridge. Once marinated, place on a lined, greased cookie sheet and bake at 425 for 30-35 minutes.
  2. Mix all pita ingredients together in a bowl. Flour the surface and knead until smooth, adding flour when necessary. Split into 4 equal balls and roll out the dough. Cook on medium heat until golden brown and flip when it starts to bubble, feel free to add cilantro.
  3. For each wrap, use one pita, 4 oz chicken thighs, 2 tablespoons sauce, and add tomatoes, onions, and cucumbers. Assemble the wrap and enjoy.
