Blackened Chicken with Spicy Tomato Cream Sauce
A high-protein dish featuring blackened chicken and a spicy tomato parmesan cream sauce, perfect for meal prep.

Ingredients
- 2 lbs Chicken Breast š
- 3 tbsp Olive Oil š«
- 2 tbsp Paprika š¶
- 1 tsp Garlic Powder š§
- 1 tsp Onion Powder š§
- 1 tsp Dried Thyme šæ
- 1 tsp Dried Oregano šæ
- 2 tsp Black Pepper ā«
- 1 tsp Salt š§
- 1 tsp Brown Sugar š¤
- 1/2 tsp Cayenne Pepper (optional) š¶
- 1 tbsp Butter š§
- 1/4 cup Sundried Tomatoes, chopped š
- 4 cloves Garlic, minced š§
- 1/2 tsp Red Pepper Flakes (optional) š¶
- 1/2 tsp Italian Seasoning šæ
- 1/2 cup Chicken Stock š²
- 1/2 cup Fat Free Half nā Half š„
- 1/2 cup Parmesan Cheese, shredded š§
- Salt & Pepper (to taste) š§
- 1 tsp Dried Oregano (optional) šæ
- 1/2 tsp Chili Flake (optional) š¶
- 1 Lemon, juiced + zest š
- Juices from resting chicken
Instructions
- Preheat oven to 375°F (190°C).
- Mix paprika, garlic powder, onion powder, thyme, oregano, black pepper, salt, brown sugar, and cayenne in a bowl to make the blackening seasoning.
- Pat chicken dry, coat in olive oil, then generously apply seasoning.
- Heat a pan on medium-high and sear chicken for 3 minutes per side until golden.
- Transfer the pan to the oven and bake the chicken for 14-15 minutes until it reaches an internal temperature of 160°F.
- Remove chicken from the oven and let it rest for 7 minutes, then slice. Drizzle with lemon juice.
- In the same pan, melt butter, add garlic, sundried tomatoes, red pepper flakes, and Italian seasoning. Cook for a few minutes, then pour in chicken stock, half nā half, and Parmesan. Cook until the sauce thickens. Stir in optional oregano and chili flake. Season with salt, pepper, lemon zest, and juice. Add the resting juices from the chicken back into the sauce.
- Serve the sliced chicken over mashed potatoes and top with the spicy tomato cream sauce.
