Cheesy Broccoli Orzo

Ingredients

  • 1 tbsp olive oil
  • 1 cup of cheese (cheddar, Colby, etc.), shredded
  • 1/2 lb broccoli florets, chopped
  • 1/2 yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp salt, divided
  • 1/4 tsp freshly ground black pepper, divided
  • 1/2 lb dried orzo pasta
  • 2 cups chicken or bone broth
  • 1/2 cup milk
  • 1 tbsp unsalted butter

Instructions

  1. Heat olive oil in a pot over medium heat. Add the onion, 1/2 teaspoon of salt, and pinch of black pepper. Cook until the onion is translucent.
  2. Add the broccoli, remaining salt & pepper and stir to combine. Cook, until the florets are vibrant green, 3 to 5 minutes.
  3. Add the garlic, orzo, and broth and stir to combine. Bring to a boil then reduce the heat to maintain a very gentle simmer. Continue to cook, stirring every minute or so, until the orzo al dente (about 7 minutes) and most of the liquid is absorbed.
  4. Add milk, stir to combine, and simmer for about 1 minute more. Remove the pot from the heat. Add butter and the shredded cheese and stir. Let sit for 5 minutes for the sauce to thicken before serving.
