Chicken Bacon Broccoli Cheddar Soup
A comforting and protein-rich soup featuring chicken, bacon, broccoli, and cheddar cheese.

Ingredients
- 4 cups chicken broth
- 40 oz chicken breast
- 8 slices bacon
- 3/4 cup heavy whipping cream
- 3/4 cup half and half
- 1 tbsp minced garlic
- 1 cup chopped carrots
- 1 cup diced onions
- 3 cups chopped broccoli
- 1/4 cup flour
- 1 cup cheddar cheese
Instructions
- In a large pot over medium heat, cook diced bacon until crispy. Remove and set aside, leaving about half the grease in the pot.
- Season chicken with 1.5 tsp garlic powder, 1 tsp onion powder, 1.5 tsp paprika, 1.5 tsp salt, 1 tsp pepper, and 1 tsp Italian seasoning. Sear in the same pot until golden and fully cooked. Remove and let rest, then dice it.
- In the same pot, slightly lower the heat and add diced onions, sauté until soft (3-4 minutes), and add minced garlic (1 minute).
- Stir in flour and butter to make a roux. If the bacon grease is insufficient, add a tablespoon of butter.
- Slowly stir in chicken broth.
- Add broccoli, carrots, 1 tsp chicken bouillon, and optionally some red pepper flakes.
- Add in half and half and heavy cream.
- Simmer for 15-20 minutes until the broccoli is tender.
- Stir in diced chicken, bacon, and cheese. Mix until the cheese melts. Taste and adjust seasonings as needed.
