Chicken Pesto Bakes
A high-protein meal prep recipe featuring chicken, pesto, rice, and veggies, baked in single-serve bowls.

Ingredients
- 2 tablespoons of uncooked basmati rice per bowl
- 5 ounces of boneless, skinless chicken breasts per bowl
- 1 tablespoon of pesto per bowl
- 1 tablespoon of plain, nonfat Greek yogurt per bowl
- 1/4 cup of chicken broth per bowl
- Salt and pepper to taste
- 2 ounces of cherry tomatoes per bowl
- 1 ounce of mozzarella cheese per bowl
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In each single-serve bowl, add 2 tablespoons of uncooked basmati rice.
- Add 5 ounces of boneless, skinless chicken breasts to each bowl.
- Add 1 tablespoon of pesto and 1 tablespoon of plain, nonfat Greek yogurt to each bowl.
- Pour 1/4 cup of chicken broth into each bowl to help cook the rice.
- Stir the contents of each bowl and season with salt and pepper to taste.
- Top each bowl with 2 ounces of cherry tomatoes and 1 ounce of mozzarella cheese.
- Bake in the oven for about 40 minutes, or until the chicken reaches an internal temperature of 165 degrees and the rice is cooked.
- Allow the bowls to cool and enjoy during the week.
Notes
Tips for Bulking Up: You can double the rice or orzo in any of the bowls. Ensure you also double the liquid to maintain the correct cooking ratio. Add extra veggies diced into the mix or steamed separately and added post-baking for additional nutrition. Increase the protein portion if desired.
