Chili Mac & Cheese Meal Prep

A high-protein, meal-prep-friendly chili mac & cheese.

Ingredients

  • 3 lbs 96/4 ground beef
  • 1 can cream of chicken
  • 2 cans Rotel tomatoes, drained
  • 2 cans kidney beans, drained
  • 8 oz bag Velveeta cheese
  • 8 oz bag fat-free cheddar cheese
  • 100 g 1/3 fat cream cheese
  • Garlic salt
  • Black pepper
  • 1 pack chili seasoning
  • 16 oz protein pasta

Instructions

  1. Cook your beef seasoned with one pack of chili seasoning, garlic salt, and black pepper.
  2. While your beef is cooking, boil 16 ounces of protein pasta.
  3. Now that your beef is cooked, add the following: 2 cans of Rotel tomatoes (drained), 1 can of cream of chicken, 2 cans of kidney beans (drained), 8 oz bag of fat-free cheddar cheese, 8 oz bag of Velveeta cheese, 100 g of 1/3 fat cream cheese. Mix this up.
  4. Add in your pasta. Mix this up until everything’s combined.
  5. Distribute the mixture as evenly as possible into 10 meal prep containers. Use your best guess to portion evenly, then weigh each container on your scale to correct from there.

Notes

Note: This recipe makes 10 servings, each with approximately 548 calories, 55g of protein, 12g of fat, and 55g of carbs.
