Crockpot Birria

A high-protein, healthy meal prep option from the Balanced Bites cookbook.

Ingredients

  • 2 lbs beef chuck or boneless short ribs
  • 4 cups beef broth
  • 1 onion, quartered
  • 5 cloves garlic, minced
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons adobo sauce from a can of chipotles
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1/2 tablespoon kosher salt
  • 1/2 tablespoon ground pepper
  • 4 bay leaves
  • Juice of 1 lime

Instructions

  1. Place the beef in the crockpot.
  2. Add beef broth, making sure the beef is mostly submerged.
  3. Add the onion, garlic, apple cider vinegar, adobo sauce, cumin, oregano, salt, and pepper.
  4. Tuck bay leaves into the mixture.
  5. Cover and cook on low for 8 hours or until the beef is tender and shreds easily.
  6. Once cooked, remove the bay leaves and discard.
  7. Shred the beef with two forks and stir in lime juice.
  8. Serve with your choice of sides or use in tacos or burritos.
