Crockpot Birria
A high-protein, healthy meal prep option from the Balanced Bites cookbook.
Ingredients
- 2 lbs beef chuck or boneless short ribs
- 4 cups beef broth
- 1 onion, quartered
- 5 cloves garlic, minced
- 2 tablespoons apple cider vinegar
- 2 tablespoons adobo sauce from a can of chipotles
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1/2 tablespoon kosher salt
- 1/2 tablespoon ground pepper
- 4 bay leaves
- Juice of 1 lime
Instructions
- Place the beef in the crockpot.
- Add beef broth, making sure the beef is mostly submerged.
- Add the onion, garlic, apple cider vinegar, adobo sauce, cumin, oregano, salt, and pepper.
- Tuck bay leaves into the mixture.
- Cover and cook on low for 8 hours or until the beef is tender and shreds easily.
- Once cooked, remove the bay leaves and discard.
- Shred the beef with two forks and stir in lime juice.
- Serve with your choice of sides or use in tacos or burritos.
