Crockpot Chicken Taco Bowl with Yellow Rice
A high protein, low calorie, and affordable meal prep recipe for crockpot chicken taco bowls with yellow rice.
Ingredients
- Chicken
- Taco seasoning
- Salsa of choice
- Frozen corn
- Yellow rice, pre-seasoned
- Cheese, shredded
- Optional: Black beans, sour cream, guacamole
Instructions
- Start by adding your chicken to a crockpot along with your taco seasoning, your salsa of choice, and your frozen corn.
- Pop your lid on and let this cook on low and slow for at least 4 hours or until your chicken is cooked through.
- Once your chicken is cooked through, take it out of the crockpot, shred it, add it back in, mix everything together, and let this continue to cook on low uncovered while you make your rice.
- Cook your rice using your preferred method. Do not rinse this rice as it is pre-seasoned. If you rinse it, you will rinse all of that seasoning off.
- Once your rice is done cooking, give it a little fluff.
- Portion your rice and chicken out to your meal containers.
- Top each meal with a quarter cup of cheese, and you’re done.
