Easy, Healthier Cheesy Beef Taquitos
Packed with protein, lower in calories, crunchy, and delicious taquitos made in 20 minutes.

Ingredients
- 1 tsp olive oil
- 1 tbsp minced ginger
- 1 onion, chopped
- 500g lean ground beef (I use 93% lean)
- 1 tsp salt, pepper, paprika, cumin, chili powder, onion powder, garlic powder, oregano
- 1/4 cup water (or any broth)
- 1/4 cup fat free Greek yogurt (or sour cream)
- 1/3 cup light mozzarella cheese
- 8 small tortillas (any kind)
- brush/spray oil (to crisp when baking)
- 1 tomato, diced
- 1 red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 lime, squeeze
- 1/4 tsp salt and pepper
- 2 tbsp fat free Greek yogurt, plain
- 2 tbsp light mayo / miracle whip
- 2 tbsp any hot sauce (I use sriracha)
- 2 tsp minced garlic
- 1/4 lemon, squeezed
- 1 tsp honey (or any sweetener)
- 2 tbsp water
- Pinch of salt
Instructions
- Heat olive oil in a pan over medium heat, then add minced ginger and chopped onion. Cook until the onion is transparent.
- Add 500g of lean ground beef to the pan, breaking it apart as it cooks.
- Season the beef with salt, pepper, paprika, cumin, chili powder, onion powder, garlic powder, and oregano. Cook until the beef is fully browned.
- Stir 1/4 cup of water (or broth) into the beef mixture and allow it to simmer for a minute.
- Reduce heat and mix in the fat free Greek yogurt and light mozzarella cheese until well incorporated and the cheese is melted.
- Spread the beef mixture evenly onto each small tortilla, then roll them tightly.
- Place rolled tortillas on a baking tray. Brush or spray with oil to help them crisp up.
- Bake until the tortillas are crispy and golden.
