Fitness Protein Dip

A high-protein, low-calorie dip perfect for achieving fitness goals.

Ingredients

  • 1/2 cup artichoke hearts, finely diced
  • 1/2 cup frozen spinach, thawed, diced, and strained (or wilt 1-2 cups fresh spinach on stove)
  • 1/4 cup blended lowfat cottage cheese
  • 1/4 cup 0% Greek yogurt
  • 1 tablespoon Parmesan cheese
  • 2 tablespoons lowfat mozzarella cheese
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • 2 tablespoons lowfat mozzarella cheese for topping

Instructions

  1. Finely dice 1/2 cup artichoke hearts and prepare 1/2 cup frozen spinach by thawing, dicing, and straining it. Alternatively, wilt 1-2 cups fresh spinach on the stove.
  2. Mix the diced artichoke hearts and spinach in a baking-safe dish with 1/4 cup blended lowfat cottage cheese, 1/4 cup 0% Greek yogurt, 1 tablespoon Parmesan cheese, 2 tablespoons lowfat mozzarella cheese, and season with salt, pepper, and garlic powder to taste.
  3. Top the mixture with an additional 2 tablespoons of lowfat mozzarella cheese.
  4. Bake at 350°F for 20-25 minutes until golden.
  5. Serve the dip. Optionally, cut up and bake carb balance tortillas for macro-friendly chips.
