High-Protein Cajun Chicken Alfredo
A flavorful, high-protein pasta dish perfect for meal prep, weight loss, and muscle gain.
- Serves 4
Ingredients
- 2 lbs chicken breast, diced
- 8 oz high-protein pasta (Banza, Barilla Protein+ or carbe diem)
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning (adjust to spice level)
- 1/2 cup low-fat cottage cheese, blended smooth
- 1/2 cup non-fat Greek yogurt
- 1/2 cup Fairlife protein milk
- 1 cup shredded parmesan cheese
- 1 tbsp butter
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt & pepper to taste
- Fresh parsley, for garnish
Instructions
- Give the pasta a good bubble bath in salted water until soft.
- Dice the chicken into bite-sized strips and season with Cajun seasoning.
- Cook the seasoned chicken on a medium-high heat pan until golden brown and remove from the pan.
- In the same pan, make the sauce by adding the milk, Greek yogurt, blended cottage cheese, parmesan cheese, and the dry seasonings: garlic powder, onion powder, paprika, and salt & pepper.
- Stir the sauce until it is smooth.
- Add the cooked pasta and chicken back into the pan and mix until well incorporated.
- Sprinkle parsley on top for garnish.
- Divide the dish into four meal prep containers.
