High-Protein Cheeseburger Bowls

A high-protein cheeseburger bowl with a special low-calorie burger sauce, perfect for a satisfying meal that’s nutritionally balanced.

Ingredients

  • 1¾ lb (800 g) Lotatoes (low-carb potatoes, see notes)
  • 1¾ lb (800 g) 95/5 ground beef
  • 8 slices low-fat cheese (Bega or Kraft Single)
  • 1 tbsp (15 g) Worcestershire
  • 1 tbsp (15 g) yellow mustard
  • salt and pepper
  • ½ cup (115 g) light-mayo
  • 3 tbsp (45 g) low-sugar ketchup
  • 3 tbsp (45 g) yellow mustard
  • ¼ teaspoon garlic
  • pickles
  • shredded iceberg lettuce

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cut Lotatoes into ½-inch cubes.
  3. Spread on baking sheet, season with salt and pepper, lightly spray with cooking spray.
  4. Roast for 25-30 minutes, flipping halfway, until golden and crispy.
  5. Add ground beef to pre-heated pan on med-high heat to sear it.
  6. Cook until browned, mix in Worcestershire, yellow mustard, salt, and pepper.
  7. Once browned, reduce heat to low, smash beef with a spatula and add double stacked slices of cheese on top (2 slices of cheese per serve).
  8. Cover the pan with a lid to melt the cheese then remove the lid and turn off the heat.
  9. In a bowl, combine light mayo, low-sugar ketchup, yellow mustard, and garlic.
  10. Divide roasted Lotatoes and each portion of cheeseburger beef between 4 bowls.
  11. Top with chopped pickles, lettuce, burger sauce.

Notes

If Lotatoes/Carisma low-carb potatoes aren’t available, cauliflower florets can be used as a low-carb alternative or swap for regular potatoes.

If using regular potatoes, reduce to 1 lb (453g) for comparable macros (467 calories | 50g protein).
