High Protein Cheesy Beef Potato Pockets
A delicious and easy high-protein snack perfect for meal prep, featuring beef-stuffed potato pockets with a cheesy center.
Ingredients
- 500g lean ground beef (5% fat or less)
- 1 medium diced white onion
- 10g diced chilli (optional for heat - sub with 1/2 tsp cayenne)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp mixed herbs
- Cooking spray
- 900g peeled potatoes (chop and boil in salted water starting from cold for an even cook)
- 125g (1 cup flour)
- 1 egg
- Salt to taste
- 1/8 potato pocket dough
- 1/8 meat filling (weigh out total mixture and divide by 8 for gram amount)
- 20g low fat grated cheese
Instructions
- Cook down the diced onions on medium heat until soft.
- Add optional diced chilies for heat.
- Add the lean ground beef and let it sear until crispy. Add seasonings (garlic powder, smoked paprika, salt, black pepper, mixed herbs) and cook through until brown. Set aside.
- Boil the peeled potatoes in salted water for 15 minutes until fork tender. Drain the water.
- Mash the potatoes until smooth, then add to a bowl with flour, egg, and a pinch of salt. Mix until a dough forms.
- Slice the dough into 8 equal pieces.
- Lightly grease your hands, and flatten a piece of dough into your palm.
- Add 1/8 of the meat filling and 20g low fat grated cheese to the center. Gently close it up to form a ball.
- Flatten it out a little.
- Add the pocket to a pan with cooking spray, cover with a lid and cook for 1-2 minutes on each side until golden brown. Repeat for all 8 pockets.
Notes
Storage & Heating: Once cooled, wrap in foil and store in the fridge or freezer. To reheat from the fridge, unwrap from the foil and airfry for 8-10 minutes at 220°C. To reheat from the freezer, unwrap from the foil and airfry for 13-15 minutes at 220°C.
