High Protein Marry Me Chicken Bites
Delicious high-protein meal with chicken bites served over creamy mash potatoes, perfect for meal prep.

Ingredients
- 750g chicken breast (diced into 1” cubes)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp italian herbs
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp olive oil
- 1000g mash potato
- Pinch of salt
- 20g light butter
- 60ml low fat milk
- 1 tsp minced garlic
- salt to taste
- 1/2 red onion
- 3 garlic cloves
- 20g tomato paste
- 40g sun dried tomatoes
- 350ml chicken stock
- 90g light cream cheese
- 15g grated Parmesan
- handful of chopped basil
- 1/2 tsp sugar
- 10g light butter
Instructions
- Boil your potatoes in some salted water for 15 minutes until fork-tender. Then drain the water and mash them up till completely smooth.
- Add light butter, low-fat milk, garlic, and salt to taste to the mashed potatoes. Mix until smooth and creamy.
- Dice your chicken breasts into 1” cubes. Add smoked paprika, garlic powder, onion powder, Italian herbs, salt, pepper, and olive oil. Mix well till fully coated.
- Cook the chicken bites on medium heat till golden brown and juicy.
- In the same pan, melt light butter and add diced onions and garlic. Cook until fragrant.
- Add tomato paste, toast for a minute, and then add sun-dried tomatoes, chicken stock, and light cream cheese. Let it melt.
- Add Parmesan, chopped basil, and a dash of sugar. Stir on low heat till the sauce thickens up.
- Serve the chicken bites over your creamy mash with the marry me sauce. Box up the remainder for meal prep.
Notes
Storage & Heating: Divide into 4 meal prep containers and store for up to 5 days in the fridge. To reheat, add the contents to a microwave-safe bowl and microwave covered with a damp paper towel for 3-4 minutes till heated through. Mix well and enjoy. You can also reheat in the pan.
