High Protein S'mores Brownies

Delicious high-protein S’mores brownies with a fudgy texture and a sweet graham cracker base.

Ingredients

  • 8 Graham cracker sheets
  • 1/3 cup (90g) sugar-free maple syrup
  • 1 cup (240g) pumpkin purée
  • 1 cup (227g) Greek yogurt
  • 2/3 cup (100g) monkfruit
  • 2 eggs
  • 1 tsp (3g) vanilla
  • 1 cup (80g) dark cocoa powder
  • 2 scoops (74g) protein powder (birthday cake flavor)
  • 1/2 cup (113g) 0% Greek yogurt
  • 1/4 cup (32g) powdered monk fruit
  • 1/2 scoops (19g) protein powder (birthday cake flavor)
  • 1-2 tbsp sugar-free jelly-o pudding mix (optional)
  • Crushed graham crackers
  • 2 tbsp + 1 tsp oil (for chocolate drizzle, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crush the graham cracker sheets and mix them with the sugar-free maple syrup.
  3. Press the graham cracker mixture onto the bottom of a 9x5-inch loaf pan.
  4. In a separate bowl, combine the pumpkin purée, Greek yogurt, monkfruit, eggs, vanilla, dark cocoa powder, and protein powder.
  5. Spread the brownie mixture over the graham cracker crust in the pan.
  6. Bake for about 45 minutes or until a toothpick comes out clean. Be careful not to overbake to maintain the fudgy texture.
  7. Mix the frosting ingredients together until smooth.
  8. Once the brownies have cooled, frost them with the prepared frosting.
  9. Top with crushed graham crackers. For an optional chocolate drizzle, melt chocolate and oil together in the microwave in 30-second increments, then drizzle over the brownies.
  10. Cut into four equal pieces to make squares and enjoy!

Notes

Tips: Use regular, not organic, pumpkin purée for a milder flavor. Replace monk fruit with any granulated sweetener if necessary. Dark cocoa powder works best for flavor and hides the pumpkin taste. Chilling the brownies in the fridge enhances texture and flavor.
