High-Protein Sweet Potato Bowls with Garlic Herb Sauce
A nutritious, high-protein meal perfect for meal prepping, featuring sweet potatoes, lean ground beef, and a flavorful garlic herb sauce.

Ingredients
- 4 large sweet potatoes (approx. 1200g total), cubed
- 0 calorie avocado spray for the pan
- 1 white onion (approx. 150g), diced
- 2lb (908g) lean ground beef (96/4)
- 3 garlic cloves, minced
- 2/4 cup (120g) tomato
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp cayenne (adjust for spice level)
- 1 tsp salt
- 1 cup (240g) non-fat Greek yogurt (or dairy-free option)
- 2 tbsp lemon juice
- 1 tbsp fresh parsley, chopped
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp Dijon mustard
- Salt and pepper, to taste
- Water, as needed to thin the sauce
- Fat-free cheese, evenly distributed over the dish
Instructions
- Cube the sweet potatoes and spray them with zero-calorie avocado spray. Sprinkle with salt.
- Place the sweet potatoes in an oven preheated to 400 degrees Fahrenheit and bake for 30 minutes.
- While the potatoes bake, dice the onion and sauté for 3 to 5 minutes.
- Add the lean ground beef to the onion and cook until browned, adding seasonings as described.
- To make the garlic herb sauce, mix non-fat Greek yogurt with lemon juice, chopped parsley, garlic powder, onion powder, Dijon mustard, salt, pepper, and enough water to thin.
- Assemble the bowls by distributing the sweet potatoes, then the beef, and finally pouring over the garlic herb sauce. Optionally, top with fat-free cheese.
Notes
These bowls are excellent for meal prep and can be stored in the refrigerator for the week.
