Homemade Chipotle-Style Burrito Bowl
A meal prep-friendly burrito bowl inspired by Chipotle, featuring cilantro lime rice, black beans, corn salsa, and guacamole.

Ingredients
- 3 Large Ripe Avocados
- 1/4 Cup Red Onions
- 3 Tbsp Chopped jalapeños
- 1 Whole Lime, squeezed
- 1/3 Cup Cilantro
- 2 tsp Salt (To taste)
- 6 Cups Cooked Rice (Long Grain Rice)
- 1 Tbsp Salt (To Taste)
- Juice of Half Lime
- 2/3 Cup Cilantro, Chopped
- 3 Cans (15.5 oz) Black beans
- 2 tsp Onion Powder
- 2 tsp Salt (To Taste)
- 1 Tbsp Lime juice
- 3 Bags (12 oz) Frozen Sweet Corn, thawed
- 3 Diced (2/3 Cup) Jalapeños, deseeded
- 1 Cup Red Onion, Diced
- 1 Cup Chopped Cilantro
- 1 Tbsp Salt (To taste)
- 1 Whole Lime Juiced
- 1 1/2 Lbs Monterey Jack cheese
- Sour cream (Daisy)
- 1 1/2 Whole Head Romaine lettuce
- Pico de gallo (Store Bought)
Instructions
- Season the black beans with salt, onion powder, and lime juice. Set aside.
- Combine thawed sweet corn, diced jalapeños, red onions, cilantro, salt, and lime juice. Mix well until everything is combined.
- Start with avocados, add lime juice, cilantro, chopped jalapeños, red onions, and salt. Mash the mixture until creamy and well-combined.
- Add lime juice, cilantro, and salt to the cooked rice. Mix well to incorporate the flavors.
- Layer the rice, black beans, corn salsa, and guacamole in a bowl. Optionally, add shredded Monterey Jack cheese, sour cream, romaine lettuce, and pico de gallo to taste.
