Homemade Quinoa Crunch Bars
A homemade snack bar featuring toasted quinoa, chocolate, and peanut butter.

Ingredients
- 1/4 cup tri-color quinoa
- 1/2 cup Lily’s stevia chocolate chips
- 1/3 cup Justin’s creamy peanut butter
Instructions
- Start with a quarter cup of quinoa, straight into a dry pan, medium heated.
- Toast the quinoa, shaking the pan until it starts popping.
- Remove the quinoa from the heat once it starts popping.
- Take half a cup of Stevia sweetened chocolate chips and melt them in the microwave slowly, without needing coconut oil.
- Add a third cup of crunchy peanut butter to a bowl.
- Add in the toasted quinoa and the melted chocolate chips to the peanut butter.
- Mix well and pour into a parchment paper lined baking dish.
- Spread the mixture out evenly in the dish.
- Place the dish in the freezer for an hour or two.
- Break the frozen mixture up into bars.
