Hot Honey Sweet Potato Bowls

A high-protein, meal-prep friendly dish with sweet potatoes, asparagus, and lean beef, perfect for bringing to work.

Ingredients

  • 1400g sweet potatoes
  • 1000g asparagus
  • 3 lbs 96/4 lean ground beef
  • 1 cup (240g) sugar-free ketchup
  • 70g zero-sugar brown sugar (like Swerve)
  • 150g hot honey
  • 660g low-fat cottage cheese
  • Cinnamon
  • Paprika
  • Garlic salt
  • Garlic powder
  • Onion powder
  • Black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Chop up 1400 grams of sweet potatoes and season them with cinnamon and paprika. Chop up 1000 grams of asparagus and season with garlic salt, onion powder, and black pepper. Spray both with a zero-calorie spray and mix well.
  3. Place the sweet potatoes on the top rack and the asparagus on the bottom rack in the oven. Bake for 35 minutes.
  4. While vegetables are cooking, cook 3 lbs of lean ground beef with garlic salt, black pepper, and onion powder in a pot. Break it up as it cooks.
  5. Once the beef is cooked, add 1 cup of sugar-free ketchup and 35g (half a cup equivalent) of zero-calorie brown sugar Swerve to the beef and mix well.
  6. Combine the cooked beef, sweet potatoes, and asparagus. Add 150 grams of hot honey and 660 grams of low-fat cottage cheese to the mixture. Mix thoroughly.
  7. Divide the mixture into five meal prep containers for easy storage.

Notes

Reheating Instructions: Reheat in the microwave for 3 minutes 30 seconds if stored in the fridge.

Serving Size: Each meal serving weighs approximately 1 lb 10 oz.
