Kirk's Chicken Marinade

Chicken Marinade similar to Speidie, Fireman’s Chicken, or NY State Fair style.

Makes enough to marinate ~5lbs of Chicken Quarters

Ingredients

• 1 cup of olive oil
• 4 cloves of garlic, minced
• 1 tablespoon of dried basil
• 1 tablespoon of dried rosemary
• 1 teaspoon of dried oregano
• 1-2 tablespoons Paprika
• 3 teaspoons of lemon juice
• 1 teaspoon of salt
• 1/2 teaspoon pepper
• 4 tablespoons of mayo
• 3 tablespoons of apple cider vinegar

Instructions

1. Combine all ingredients and let marinade overnight.
