Loaded High Protein Nacho Soup

A creamy, hearty, one-pot soup that combines the best parts of nachos into a high-protein meal. Perfect for soup season!

Ingredients

  • 1 tbsp olive oil
  • 1 onion
  • 3 cloves garlic
  • 1 lb lean ground beef
  • Salt & pepper
  • 1 packet taco seasoning (or 1½ tbsp chili powder, 1 tsp cumin, ½ tsp smoked paprika)
  • 1 can fire roasted tomatoes (about 16oz)
  • 1 jar salsa (about 16 oz)
  • 20 oz bone broth
  • 1.5 cups ricotta or blended cottage cheese
  • 1/2 cup shredded cheddar
  • 8 oz Kaizen high protein pasta or pasta of choice
  • Toppings: crushed tortilla chips, diced avocado, jalapeños, cilantro, Greek yogurt or sour cream drizzle, chili oil or cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until translucent, about 3-4 minutes.
  2. Add the ground beef, a pinch of salt and pepper, and cook until browned, about 6-8 minutes, breaking it up with a spatula as it cooks. Stir in taco seasoning or the chili powder mix.
  3. Pour in fire roasted tomatoes, salsa, and bone broth. Bring to a simmer and cook for 10-15 minutes so the flavors come together.
  4. Blend the cottage cheese (or grab ricotta) and add with shredded cheddar, then stir it into the pot.
  5. Add Kaizen high protein pasta (or pasta of choice) and boil in the soup for about 75 percent of the package cook time so it stays perfectly al dente.
  6. Serve topped with crushed tortilla chips, diced avocado, cilantro, jalapeños, cilantro, or Greek yogurt or sour cream drizzle. Add more cheese or chili oil if desired.
