Loaded High Protein Nacho Soup
A creamy, hearty, one-pot soup that combines the best parts of nachos into a high-protein meal. Perfect for soup season!
Ingredients
- 1 tbsp olive oil
- 1 onion
- 3 cloves garlic
- 1 lb lean ground beef
- Salt & pepper
- 1 packet taco seasoning (or 1½ tbsp chili powder, 1 tsp cumin, ½ tsp smoked paprika)
- 1 can fire roasted tomatoes (about 16oz)
- 1 jar salsa (about 16 oz)
- 20 oz bone broth
- 1.5 cups ricotta or blended cottage cheese
- 1/2 cup shredded cheddar
- 8 oz Kaizen high protein pasta or pasta of choice
- Toppings: crushed tortilla chips, diced avocado, jalapeños, cilantro, Greek yogurt or sour cream drizzle, chili oil or cheese (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until translucent, about 3-4 minutes.
- Add the ground beef, a pinch of salt and pepper, and cook until browned, about 6-8 minutes, breaking it up with a spatula as it cooks. Stir in taco seasoning or the chili powder mix.
- Pour in fire roasted tomatoes, salsa, and bone broth. Bring to a simmer and cook for 10-15 minutes so the flavors come together.
- Blend the cottage cheese (or grab ricotta) and add with shredded cheddar, then stir it into the pot.
- Add Kaizen high protein pasta (or pasta of choice) and boil in the soup for about 75 percent of the package cook time so it stays perfectly al dente.
- Serve topped with crushed tortilla chips, diced avocado, cilantro, jalapeños, cilantro, or Greek yogurt or sour cream drizzle. Add more cheese or chili oil if desired.
