Mexican Inspired Street Corn Chicken Pasta
A high-protein Mexican-inspired pasta dish with chicken and street corn flavors.

Ingredients
- 20 oz chicken breast, cubed
- Salt & Pepper, to taste
- 1 teaspoon Garlic powder
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp cumin
- Avocado oil spray, to cook
- Protein Pasta, 12 oz
- 1/2 white onion, finely chopped
- 2 cloves garlic
- 1/4 cup pasta water
- 1 cup corn
- 1-2 Jalapeños, finely diced
- 1/4 cup fat-free or low-fat mozzarella cheese
- 2 tbsp light cream cheese
- 1 cup fat-free fair life milk
- 1 cup fat-free cottage cheese
- 2 tbsp heavy whipping cream
- 1/4 cup Parmesan cheese
- Salt, 1/4 tsp
- Pepper, 1/2 tsp
- Garlic powder, 1/2 tsp
- 1 tsp hot honey (optional)
- 3 tbsp cotija cheese
- Tajin
- Cilantro
Instructions
- Cook protein pasta until al dente.
- Cut the chicken breast into tiny cubes and season with salt, pepper, garlic powder, chili powder, paprika, and cumin.
- Sear the chicken on medium-high heat with avocado oil spray until fully cooked.
- Blend cottage cheese, fat-free milk, light cream cheese, Parmesan cheese, heavy cream, salt, black pepper, and garlic powder until smooth.
- Saute onions and garlic for a few minutes.
- Add the cooked pasta, sauce, and a touch of pasta water if the mixture is too thick.
- Stir in mozzarella cheese.
- Add corn and jalapeño and cook for the last few minutes.
- Serve the pasta topped with cooked chicken, a sprinkle of cotija cheese, and Tajin. Optionally garnish with cilantro.
Notes
The dish offers a great combination of flavors from the street corn and optional toppings like cotija cheese and Tajin. Adjust spiciness with jalapeños to taste.
