Protein Loaded Sweet Potato Boats
Protein-loaded sweet potato boats topped with cheesy Mexican beef.

Ingredients
- 400g Beef Mince
- 2 Large Sweet Potatoes
- 1/2 Red Onion
- 3 Garlic Cloves
- 1 Green Pepper
- 150g Black Beans
- 4 Tbsp Tomato Paste
- 100g Light Mozzarella
- 1 Tbsp Taco Seasoning
- 2 Fresh Jalapenos
- Few Sprigs of Coriander
Instructions
- Pierce the skin of the sweet potatoes with a fork.
- Bake the sweet potatoes in the oven at 200°C (400°F) for 45–60 minutes or air fry at 190°C (375°F) for 35–45 minutes.
- While the sweet potatoes are baking, prepare the Mexican beef mixture.
- Sauté the red onion until softened.
- Add the beef mince, garlic, jalapenos, green pepper, taco seasoning, and tomato paste.
- Fry the mixture until the beef is browned, then stir in the black beans.
- Once the sweet potatoes are cooked, slice them open and mash the inside lightly.
- Top the mashed sweet potatoes with the Mexican beef mixture and grated mozzarella.
- Place under the grill until the mozzarella is golden and crisp.
- Top with fresh jalapenos and coriander before serving.
Notes
For best results, ensure the sweet potatoes are evenly pierced before cooking. Adjust seasoning as per taste preference.
