Slow Cooker Marry Me Chicken Orzo
A high-protein slow cooker meal with chicken and orzo, perfect for meal prep and freezing.
- Serves 10
Ingredients
- 60oz Chicken Breast (1700g)
- 1 Tbsp Garlic Salt (15g)
- 1 Tbsp Italian Seasoning (7g)
- 1 Tbsp Smoked Paprika (7g)
- 4 Tbsps Tomato Paste (60g)
- 8 Garlic Cloves (25g)
- 3 Cups Dry Orzo (570g)
- 4 Cups Chicken Bone Broth (960g)
- 1 Cup Diced White Onions (150g)
- 1 Cup Sun Dried Tomatoes (50g)
- 2 Cups Blended Cottage Cheese (450g)
- 1 Cup Parmesan (100g)
- 1 Small Bag of Spinach (200g)
- 3 Tbsps Lemon Juice (45g)
Instructions
- Throw some diced chicken breast into a slow cooker along with all of the things I’ll put on the screen. Give it all a good mix and cook on high for about 2 hours.
- When the chicken is done cooking, add in some bone broth, dry orzo, diced onions, and some sun-dried tomatoes. Combine everything together and cook for an additional 30 minutes.
- And when the orzo is soft, you’re going to add in some blended cottage cheese, parmesan, some fresh spinach, and just a little bit of lemon juice.
- Now divide everything into 10 meal prep containers, throw in the freezer, and enjoy.
Notes
Meal Prep Reheating Instructions: To reheat the meal preps from frozen, add a few tablespoons of water to the container, cover with a wet paper towel, and microwave for around 5-6 minutes.
