Steak Nacho Power Burrito
Packed with protein, these burritos feature steak, bacon, potatoes, and a homemade nacho cheese sauce for a flavorful and filling meal.
Ingredients
- 5 Mission Carb Balance Whole Wheat Tortillas
- 12 oz sirloin steak, cooked & seasoned with taco seasoning
- 6 slices uncured center cut no sugar bacon
- 400g egg whites
- 1 medium russet potato (220g), peeled & cubed
- 120g reduced fat cheddar
- 120g fat free cottage cheese
- 2 tbsp light cream cheese
- 1 packet Kraft Mac & Cheese powder
- Optional: smoked paprika, garlic powder, splash of water or milk
Instructions
- Cube potato, spray with avocado oil, boil 10 minutes until soft. Air fry at 400°F for 20 minutes until crispy.
- Dice steak, coat in taco seasoning, sear on high heat until internal temperature reaches 135°F or higher.
- Pan fry bacon slices until crisp. Chop into bits.
- Scramble egg whites lightly and set aside.
- Blend cheddar, cottage cheese, cream cheese, mac powder, and seasonings until smooth. Heat gently in a pan until melted and creamy.
- In one giant bowl, mix seared steak, crispy potatoes, scrambled eggs, bacon, and warm cheese sauce.
- Warm tortillas, fill each with 1/5th of the mixture, roll tight, and grill seam-side down if desired.
